This coming Sunday, kids big and small will be scarfing down jelly beans, pink and yellow Peeps, Cadbury eggs, and chocolate bunnies.
But what about your guinea pigs? Have you thought about an Easter basket for them?
You could, we suppose, fill the basket with commercial treats. But we have way better choices that are crunchy, delicious, and healthy.
- Belgian endive
- Swiss chard (look for bunches of "rainbow chard" for color variety)
- Boston lettuce (also called butter lettuce)
If you're worried about leftovers, the endive, radicchio, frisee, and Boston lettuce will be great add-ins to the salad you serve with your holiday dinner. My Italian neighbors turned me on to "escarole and beans." And there are some really tasty variations of Swiss chard with baked polenta.
To encourage a little foraging while your guinea pigs eat, consider arranging the treats in a large veggie basket instead of stacking things on top of the food dish.
